Blueberry Muffins (GF & DF)


Sunday funday! Meal prep, laundry, grocery shopping, family time, MUFFIN TIME!




~ I love to do my grocery shopping at a few different stores. The majority of my shopping is done at Aldi. Their prices and quality are fantastic! And you can't not love the aisle of randomness. Need a new laundry basket? Barbie doll? Exercise bike? Any-who, I also go to Trader Joes and Wegmans, which is our local grocery store. And of course the random Target and Walmart run. So you will see a variety of different brands in my posts.

Ingredients:

- 2 cups of oat flour

- 1/2 a cup of sugar

- a pinch of salt

- 2 tsp of baking powder

- 1/2 cup of softened dairy free butter

- 1 ripe banana

- 1 tsp of vanilla

- 1/2 a cup of unsweetened almond milk

- 1 cup of blueberries (fresh or frozen

How to:

1. In a food processor or nutra bullet, pulverize oats until they become a flour like consistency

** You can purchase oat flour already made, but pulverizing it at home gives it a great texture

2. Add the oat flour, sugar, baking powder, and salt together and mix

3. Then add the melted butter, mashed banana, almond milk, vanilla to the dry ingredients and mix with an electric mixer

4. Fold the blueberries into the batter

5. Spray a muffin tin with cooking spray and add the batter to the individual tins

6. Bake for 30-35 minutes at 375

7. Once the muffins come out of the oven, let them cool for about 5-10 minuets before moving them to a cooling rack

8. SCARF THOSE MUFFINS!
