Bomb Banana Bread

I always love experimenting with different recipes, trying to perfect them, make them better, easier, healthier. But 1 recipe I have been told to NOT mess with is my banana bread. Per my husband.


~ I love to do my grocery shopping at a few different stores. The majority of my shopping is done at Aldi. Their prices and quality are fantastic! And you can't not love the aisle of randomness. Need a new laundry basket? Barbie doll? Exercise bike? Any-who, I also go to Trader Joes and Wegmans, which is our local grocery store. And of course the random Target and Walmart run. So you will see a variety of different brands in my posts.

Ingredients:

- 2 cups of oat flour

- 2 tsp of baking powder

- 1/2 cup sugar

- 1/4 cup unsweetened almond milk

- 1/4 cup coconut oil (melted)

- 1/4 cup dairy free butter (melted)

- 1.5 tsp vanilla

- 2 extra ripe bananas

- 1/4 cup dairy free chocolate chips (optional)


How to:

**preheat oven to 375

1. In a food processor or nutra bullet, pulverize oats until they become a flour like consistency

** You can purchase oat flour already made, but pulverizing it at home gives it a great texture

2. Smash bananas with a fork or masher

3. Mix mashed bananas, sugar, vanilla, almond milk, oat flour and baking powder together

4. Melt coconut oil and butter together for about 20 seconds

5. Mix the butter/coconut oil with the rest of the ingredients

6. Fold in the chocolate chips

7. Grease a loaf pan and pour in the banana bread mixture

8. Bake for 50-60 minutes

9. To check if the bread is fully cooked, place a knife in the center of the bread. If it comes out clean your bread is fully cooked

10. Let the banana bread fully cool before slicing into it

11. SCARF THAT BANANA BREAD!
