Jambalaya (meat free)

The Super Bowl has a little something for everyone. Theres the commercials, the halftime show, football (what's that *ha*), but most importantly FOOD!

~ I love to do my grocery shopping at a few different stores. The majority of my shopping is done at Aldi. Their prices and quality are fantastic! And you can't not love the aisle of randomness. Need a new laundry basket? Barbie doll? Exercise bike? Any-who, I also go to Trader Joes and Wegmans, which is our local grocery store. And of course the random Target and Walmart run. So you will see a variety of different brands in my posts.






Ingredients:

- 4 cloves of garlic (pressed)

- 1/2 an onion chopped

- 2 celery stalks with leaves chopped

- 1 bell pepper

- 1 can of diced tomatoes (28 oz can)

- 3 cups of beans (rinsed) of your choice (I used black beans, chickpeas, and pinto beans)

- 4-5 cups of vegetable stock (depending on the type of rice you're using)

- 1 tsp paprika

- 1 tsp oregano

- 1 teaspoon thyme

- 1 tsp basil

- 1/4 - 1/2 tsp cayenne pepper (depending on how spicy you like it)

- 2 tbs coconut aminos or soy sauce

- 2 cups uncooked brown rice

- salt and pepper to taste

- chopped green onion for topping (optional)



How to:

1. Saute' the chopped onion, and pressed garlic with a splash of olive oil or broth until soft.

2. Add the diced tomatoes, veggie stock, rice, spices, herbs, pepper, sauces, and pepper.

3. Simmer until the rice is fully cooked and all the liquid is absorbed (about 30-40 minutes)

4. After the rice is fully cooked, add the beans and cook for a few extra minutes to combine all the ingredients

5. Add salt as desired

6. Sprinkle chopped green onion before serving

7. SCARF THAT JAMBALAYA!
