Mac & Cheese (guilt free)

I think that we can all relate to after eating Mac & Cheese we all feel a little guilty and bloated. So here is one of my go-to comfort food favorites.
~ I love to do my grocery shopping at a few different stores. The majority of my shopping is done at Aldi. Their prices and quality are fantastic! And you can't not love the aisle of randomness. Need a new laundry basket? Barbie doll? Exercise bike? Any-who, I also go to Trader Joes and Wegmans, which is our local grocery store. And of course the random Target and Walmart run. So you will see a variety of different brands in my posts.
-1/2 cup of cashews (processed into a fine powder)
-1 clove of garlic
-1/4 cup of nutritional yeast
-1 tablespoon of yellow mustard
-1/2 cup of plant based milk (I use almond)
-1 heaping cup of pasta (I use Aldi liveGfree rotini)
-1/2 cup of peas (optional)

1. In a blender or bullet, pulverize cashews into a flour like consistency
2. Place the rest of the ingredients into the container and mix in a blender or bullet
3. Pour over prepared pasta
4. Scarf that Mac & Cheese!
