Mini "Meat" loafs

Whether you're making dinner for the fam or meal prepping for the week, here is one of my favorite and easy meals!



~ I love to do my grocery shopping at a few different stores. The majority of my shopping is done at Aldi. Their prices and quality are fantastic! And you can't not love the aisle of randomness. Need a new laundry basket? Barbie doll? Exercise bike? Any-who, I also go to Trader Joes and Wegmans, which is our local grocery store. And of course the random Target and Walmart run. So you will see a variety of different brands in my posts.



Loaf


-1 diced carrot (peeled)

-1 celery stalk (cut)

-1/4 onion (cut)

-4 cloves of garlic

-1 cup of oats (quick or old fashioned)

-1 can of chickpeas (drained and rinsed)

-2 tbs coconut aminos (or 1 tbs soy sauce)

-2tbs balsamic vinegar

-2 tbs extra virgin olive oil

-2 tbs tomato paste

-3 tbs nutritional yeast (flakes)

-1.5 tsp basil

-1 tsp oregano

-1/2 tsp thyme

-salt and pepper to taste


Sauce


-2 8 OZ. cans tomato sauce

-1 tbs tomato paste

-1/4 cup ketchup

-2 tsp garlic powder

-1/2 tsp basil

-1/2 tsp oregano

-salt and pepper to taste



 


How to:


~Preheat oven to 350

1. In a food processor, add all the ingredients for the loafs in. Pulse the processor until all ingredients are combined and mixed well. Scrape the edges occasionally to ensure it mixes well

2. Lightly grease a muffin tin

3. Scoop out mixture with your hands and roll the loaf mixture into a ball and place each one in a muffin tin.

4. Bake for 25-30 minutes

5. Mix together the sauce ingredients in a bowl and set aside

6. After the loafs are done baking, remove from the oven and spoon over some sauce on each loaf. Reserve extra sauce for topping before eating.

7. Put the loafs back in the oven for 5-8 more minutes

8. Remove the completed loafs from the oven and allow them to cool for about 10 minutes before serving

9. Place your loafs on a plate and drizzle extra sauce

10. SCARF THEM LOAFS!
