Peanut Veggie Stir Fry with Noodles


When you have all the ingredients for a recipe AND its Monday... WINNING!

I had a hot minute to prepare dinner but not enough time to photograph, but whats important is knowing whats in it recipe and how to make it right? VOILA!







~ I love to do my grocery shopping at a few different stores. The majority of my shopping is done at Aldi. Their prices and quality are fantastic! And you can't not love the aisle of randomness. Need a new laundry basket? Barbie doll? Exercise bike? Any-who, I also go to Trader Joes and Wegmans, which is our local grocery store. And of course the random Target and Walmart run. So you will see a variety of different brands in my posts.

Ingredients:

**Add the amount of veggies according to what you like**

- 1 cup of peppers

- 1 cup of peas

- 1 cup of corn

- 2 cups of broccoli

- 1 cup of chopped carrots

- 1/2 an onion chopped

- 2 cloves of garlic pressed

- 1/2 a pack of rice noodles

- 1/2 cup of chopped green onion (optional)

**Some stores carry stir fry veggies already frozen together in a bag, that is an option as well**



Sauce:

**Adjust measurements to your own liking (ie. if you don't like a lot of ginger, soy, etc. add less)**

- 1/2 cup of water

- 1/4 cup of creamy peanut butter

- 1/2 - 1 tbs of ginger (depending on how much you like)

- 1-2 tbs of coconut aminos or soy sauce

- 2 tbs of PURE maple syrup



How To:

1. In a large deep pan on medium heat, add water and peanut butter. Stir until blended and creamy

2. Add the ginger, aminos, and maple syrup and stir until blended (don't bring to a boil)

3. While sauce is heating up, boil the noodles according to the package instructions

4. Add all the veggies to the sauce and heat (do not bring to a boil)

5. When the noodles are fully cooked, drain and add to veggie and sauce (when the veggies are fully cooked)

6. Adjust flavors to your liking.

7. Top with chopped green onion

8. SCARF THAT STIR FRY!
