Tacos don't always have to be on Tuesday's.


The dreaded "Whats for dinner?" conversation in the house. "I don't know what do you want?" Sound familiar? But when your naturally picky husband says he wants tacos you don't say no! Luckily I always keep our taco ingredients on standby for moments like these. Since my husband and I don't eat meat its easy to do.


~ I love to do my grocery shopping at a few different stores. The majority of my shopping is done at Aldi. Their prices and quality are fantastic! And you can't not love the aisle of randomness. Need a new laundry basket? Barbie doll? Exercise bike? Any-who, I also go to Trader Joes and Wegmans, which is our local grocery store. And of course the random Target and Walmart run. So you will see a variety of different brands in my posts.



 


-I Can of Black beans (drained)

-2 Garlic cloves (pressed)

-1/4 Onion (diced)

-Cayenne pepper

-Paprika

-Cumin

-Salsa

-Veggie stock

-Taco shells or tostadas

-Choice of cheese

-Frozen pineapple (duh)

-Guacamole

-Nutritional yeast (optional)


 

* Preheat your oven to 425

1. Start off by sautéing the onion and garlic in either olive oil or stock

2. Once the onion and garlic become fragrant add in a can of black beans and a few tablespoons of veggie stock (enough to partially cover the beans)

3. Let the beans, onion and garlic cook for about 4-5 minutes

4. Stir in the Cumin, Paprika, and Cayenne. I eyeball the seasonings so do so to your liking.

5. Mash the beans, onions, garlic with a potato masher. They should resemble refried beans

6. If you used too much veggie stock you can add in a couple tablespoons of nutritional yeast to thicken up the beans. Or if you just like the cheesy flavor then add it anyways!

7. I like to add bits of frozen pineapple to my salsa. You can certainly purchase pineapple salsa already made.

8. Prepare you taco shells or tostadas according to the instructions on the packaging

9. Spread the refried beans onto the taco shells followed by the salsa

10. Add on your choice of cheese. We used Daiya cheddar

11. Bake the tacos in the oven for about 10 minutes at 425

12. Once the tacos come out of the oven, spread on the guacamole or fresh avocados

13. SCARF THEM TACOS!!!!!!!!!!!!!!!!!
